Brass Tacks | The New Hangout on Blake Street

From the group behind Curio, comes a full scale bar, eatery and hip hangout named Brass Tacks. It’s a cool, open yet cozy space with an amazingly stocked bar showcasing over 300 spirits and a counter-service kitchen making sandwiches, sides and a few large-scale “family meals”. They opened early February, transforming the former Blake Street Vault in LoDo.

The idea behind Brass Tacks was creating a place where people can feel comfortable coming in any time of day by providing delicious food and drink options from mid morning till past midnight in a comfortable, laid back setting. In the morning try a Vietnamese coffee, nitro cold brew or kombucha on tap with a $3 egg and cheese sandwich. For lunch we tried a couple sides and sandwiches, which are available all day. Happy hour is daily from 3-6pm and again Sun-Thu 10pm to close with $1 off beers, $2 off wine and cocktails and a few food specials. The variety of seating options, a couple TVs, free foosball upstairs, and no wait staff give guests the sense they can hang out for as long as they’d like.

The lovely bar features 20 beers on tap and a few wines and cocktails. We tried the sour on tap which was so refreshing and effervescent and a Saison which went well with our creamy Mac & Cheese and flavor-filled chicken wings. They also feature a whole fridge of bottled cocktails; one side has mixed, carbonated style cocktails, the other side has stronger, stirred cocktails. We went for the tequila based Cobble Hill which was very smooth, a bit sweet like honey, and overall amazing. One of their featured nitro cocktails on tap was a Peanut infused bourbon with Coca Cola which we had to sample. It was sweet and savory and we learned mixing peanuts with Coca Cola is a popular thing people do in Florida.

For our entrees (pictured above) we selected the turkey sandwich which came with alfalfa sprouts, thin sliced cucumber, avocado, havarti cheese, and basil aioli. We tried this on their soft gluten free ciabatta and we were impressed by the flavor and texture of this gluten free bread. We also ordered the Chimichurri steak sandwich containing marinated grilled flank steak, chimichurri, roasted piquillo peppers, arugula, jalapeno on a fresh baguette that was tasty and very filling.

In addition to good eats and an endless drink selection, the bar features a frozen cocktail machine with rotating monthly concoctions for $9 ($7 during happy hour). For May, they’re serving up a delicious frozen margarita featuring a 100% agave tequila and quality mixers that are worth coming for this summer. Definitely check out this cool new hangout, we loved kicking back and watching the Nuggets play while eating and drinking the afternoon away at Brass Tacks.

Denver Mini Derby Review

In our opinion, Denver’s best KY Derby party is the Denver Mini Derby. This event started a couple years ago by Eleven Creative, the same group who created the Mile High Beer Festival, Whiskey+Doughnuts, and RiNo Prom (to name a few). This year’s Mini Derby moved from its former location at Stanley Marketplace to the bigger Conservatory Green Park in Stapleton.

Proceeds from the ticket sales helped support their charity partners Next Step Horse Rescue and Minds Matter of Denver. The Mini Derby is names such because the event actually has a mini horse race: mini-sized race course with mini-sized horses! The horses are all rescue horses from Next Step Horse Rescue and guests could visit with them before and after the race and take photos with the little cuties.

One of the best parts is all tickets included open bar access complete with Bulleit Frontier Whiskey mint juleps, Smirnoff vodka cocktails, Avery Brewing Company beer, wines, champagne, Red Bull and KeVita kombucha! I’d argue this open bar was better than at most events and kept everyone refreshed, energized and extra-cheery.

Petting the ponies

And boy was there plenty to cheer for! The 145th annual Running of the Kentucky Derby was just one of the races at the Denver Mini Derby. The real reason people pick this Derby party over any other is to see the live mini horse race and Corgi race take place on the greens right in front of them! Guys and gals alike we’re so excited to see these races and exuberantly cheered the cute animals on. It was adorable.

The Corgis line up

Prizes were awarded for Best Dressed Woman, Best Dressed Man, Best Hat, and Cutest Couple which made for a beautiful event. Rollin Smoke BBQ and Infinitus Pie’s food trucks sold tasty eats and Groove ‘N Motion provided the live music before the race.  We had a fantastic time and we highly recommend you join in the fun next May!

Live music before the race!

Bottomless Bar Car Brunch at The Nickel

If you're looking for a booze infused brunch, The Nickel, inside Hotel Teatro, provides guests with three great bottomless beverage options. Even better, each is customizable and interchangeable, meaning guests can bounce from sophisticated mimosas to punchy Bloody Mary's to sweet cereal-infused White Russians!

Coco Puff’s infused White Russian

Mimosa & Bombolone

Located within Denver’s historic Tramway Building, now Hotel Teatro, The Nickel pays homage to the space that was once used to collect fare from customers riding its resident streetcars: a nickel. Brunch is served Saturday and Sunday's from 10am- 3pm and the Nickel is open for breakfast, lunch and dinner daily. Their full menu incorporates quality ingredients from local farmers, ranchers, distillers and craft producers, and is comprised of dishes that make guests feel the warmth of familiarity. The Nickel also has happy hour daily complete with cocktails, charcuterie, Colorado craft beer and wine from 3pm-5pm.

Biscuits & Gravy. Chicken & Waffles. Bloody Mary.

We thoroughly enjoyed all the bar car drinks and fixings and found many diners around us doing the same. For sustenance we ordered the Biscuits & (duck confit) Gravy which was good but not as decadent and delicious as we’re used to. Our other dish was Chicken & Waffles which had very lightly battered/fried chicken, with waffles that were nicely golden crisp on the outside and soft inside. We took our time enjoying the food, the ambience and the bottomless bar car. The restaurant was pretty busy with a diverse mix of diners; young and old, boozers and non-boozers, hotel guests and Denver locals.

The Barrel Bar

Coda coffee & side of bacon.

At the end of the month Hotel Teatro, being one of Denver’s most pup-friendly hotels, will be hosting their third annual puppy brunch Sunday, April 28th! During this special brunch, puppies will be available to play with and adopt in the lobby in celebration of National Adopt a Shelter Pet Day. To help raise money for Underdogs Animal Rescue, there is a $5 suggested donation to play with the pups and The Nickel will then treat you to a mimosa for donating! More info on the event here.

Zeal, "Food for Enthusiasts"

A healthy new Denver restaurant has been on our radar long before opening here. Zeal, Food for Enthusiasts, is a casual Boulder-based food and juice spot attracting health conscious foodies for the past five years. Due to its popularity, owners Wayde Jester and Chelsea Norton decided to try out the Denver market and opened in the Tech Center’s Landmark development last Fall.

Zeal offers the best in flavor and quality thanks to their organic ingredients and superb chef. Zeal uses local and organic ingredients, much of which come from their small farm north of Boulder. Their Chef, aka Enthusiast de Cuisine, John Broening grew up in France, the Soviet Union and Portugal where his father was a foreign correspondent for the Associated Press. Broening has worked in several top restaurants in New York, San Francisco, Paris and Denver and has been a featured guest chef at the James Beard House several times.

During our dinner we enjoyed a range of veggie, fish, meat and vegan dishes as well as their cold-pressed juice and house made Kombucha. Their current juices were kale and ginger, beet juice, and carrot based and are available as a flight or stand alone. They also serve as flavor additions to their green tea-based Kombucha. These aren’t the only offerings on tap at the bar, Zeal DTC offers a selection of craft beer, wine and cocktails and offer happy hour 2:30-5:30pm daily.

Mussels with rosemary and white wine, pickled sweet peppers, anchovy, touch of butter

We began with a bowl of marvelous mussels and their popular Conscious Kale Salad that’s been a staple since opening in Boulder. We saw, even before eating, how this salad has remained a staple for so long with its colorful array of superfoods portioned out artfully in the bowl. The salad is kale based and features bright pickled carrots, sweet golden beets, crunchy walnuts and sprouted lentils.

For our main we ordered the Lamb Burger and the Poke Bowl. The Lamb Burger comes topped with tzatziki and a tomato jam served with either greens or a side of scrumptious chimichurri smashed potatoes. The Poke Bowl was laid out like the salad with its colorful ingredients portioned out atop a bed of brown rice. The crisp cucumbers and drizzle of spicy aioli were a great flavor addition.

Lamb Burger (right) and the Poke Bowl (left)

Our sweet ending was a not-so-sweet, but very much a treat, cashew-based cheesecake. This vegan dessert mimics the real thing in its creamy texture but with much less sugar and no dairy. With a walnut crust, fresh berries and agave drizzle, we loved every last bite of this delicious creamy treat.

Zeal’s casual farm to table restaurant will be opening a new Boulder location this summer and just launched weekend brunch in their DTC location. From 9:30am-2:30pm enjoy their popular Acai bowls and bullet coffee along with new items like Eggs Benedict, pancakes three ways, bacon fried rice, and $14 bottomless mimosas.

Broadway Market | Denver's Newest Food Hall

The Bar

The Food Hall trend has steadily made its way across the country and has found a warm welcome from Denverites. From The Source’s opening in 2013 to the brand new Broadway Market opening today, there are now over a handful of deliciously cool food halls to spend your day or night.

Broadway Market was inspired by village food halls where people have been gathering to eat and mingle for centuries, but puts a Mile High spin on its global cuisine and communal setting. Broadway Market comes from developer Mark Shaker of Stanley Marketplace and Brad Arguello, co-founder of Avanti Food & Beverage, along with Snooze’s Adam Schlegel helping curate the concepts. “We opened Broadway Market as a food hall and community gathering place that’s also a celebration of Denver’s best chefs. They have worked in this type of concept before which means they can focus on the food and their customers,” says Mark Shaker. We noticed a few of the restaurants overlap from Stanley Marketplace such as Maria Empanada, Misaki Sushi, Mondo Mini (Market), and Miette Et Chocolat. In addition to their tasty food, there’s pizza and pasta, doner kebabs and falafel, burgers and tots, tikka masala and curry, and even a cold-pressed juicery! We tried it all and loved the variety and quality of food to choose from here.

The nine restaurants in Broadway Market

In addition to their nine restaurants, there’s two locally owned boutiques and a full bar in the center of it all with craft cocktails, lots of wine and even a sake on the menu. Beer lovers have their own special spot, an entire “Bottoms Up” beer wall with a dozen Colorado beers and ciders on tap. The do-it-yourself beer wall lets you fill your glass with however much you want and is priced per ounce, so you can pick and choose! Making this extra fun is your glass fills from the bottom up by way of a magnetic stopper - I’m telling you this so you don’t end up with beer all over your table like we did after curiously/drunkenly poking the bottom of our glass.

Broadway Market makes it easy for guests to purchase from multiple vendors with an optional fob card that can link to your credit card. This card allows you to swipe away with only one charge to your credit card and if you plan on using the beer wall, the card is necessary to activate it and will show you your running total with each pour, thankfully.

As Denver, and the world, expands so too does our interest in sustainability. Broadway Market aims to be as close to zero waste as possible with the help of their local compost partner Scraps. By using real dishes and utensils Broadway Market avoids all single-use plastics: no plastic straws, no plastic condiment packets, nothing that gets used just once and then thrown in the landfill. From sourcing to preparation to dining and plate-scraping, just about everything at Broadway Market that can be disposed of can be composted or recycled. They plan to examine their operations during the first three months for the best ways to live up to their zero waste goals.

Add this new food hall to your list of hangouts as it’s perfect for a causal breakfast with your laptop, lunch with a diverse group of eaters, or a fun dinner date or drink stop. Another reason to go, it’s easy to get to -with a central location on Broadway and 9th and a free parking lot, it’s definitely our new hang out spot!

Uchi Denver | Modern Japanese Cuisine

Japanese tradition and culinary innovation fuse at the award-winning Uchi restaurant in Denver’s RiNo neighborhood. Uchi Denver is the fourth Uchi concept from Austin-based restaurant group Hai Hospitality, and the first outside of Texas. From the spices and sauces used to enhance their nigiri, sashimi and makimono, to the flair they pair with their specialty dishes, Uchi’s menu is diverse and interesting. You won’t find the regular rolls you’re used to seeing here, only expertly crafted dishes with the finest ingredients from around the world.

Hama Chili (top left), Suzuki Yaki (top right), Machi Cure (center)

Uchi Denver is the first to have a full bar and cocktail program, I guess they know Denverites like to drink, in addition to their comprehensive offering of sakes, beer, and wine. To our delight, they uphold the tradition of sake social with Happy Hour from 5-6:30pm nightly with $3 sake and Kirin beer, $7 wine, and a great selection of sushi and other tasty bites!

Uchi’s fabulous food and fish is due to their close relationships with local farmers and the Fukuoka and Tsukiji markets in Japan from which they fly in seafood every day. Combining seasonal ingredients with a spectrum of seafood from around the globe, Uchi invites diners to expand their expectations and boundaries. We were recommended to experience the Omakase – Chef’s Tasting of 10 courses – and we were surprised and delighted by the diverse dishes. Uchi also offers a smaller Signature Tasting (six courses) and a Vegetarian Tasting (six course) in addition to their full menu.

Kinoko Nabe - 5 types of mushroom, crunchy rice, mushroom tentsuyu (broth) and egg yolk that is mixed in at your table.

We started with a Social Hour roll and the Machi Cure (pictured below) composed of yucca chips, smoked yellowtail, pear and Marcona almonds. This dish looked like a contemporary art piece and was just as intriguing on the palate. Next was their house named Uchi Salad, beautiful local greens wrapped around jicama with a cashew pesto sauce. The greens in this salad are sourced directly from the restaurant’s rooftop greenhouse, a partnership with Altius Farms and the only Hai property to have such a feature!

Machi Cure

James Beard Award-winning Chef Tyson Cole leads the team in Denver with his signature non-traditional take on Japanese food. Having trained for more than 10 years in Tokyo, New York, and Austin under two different sushi masters, he continues his path of study and experimentation each day at the restaurants in the Hai Hospitality family. Employing classical cooking techniques with a Pacific Rim perspective, Cole marries global ingredients with traditional Japanese flavors, resulting in inspired combinations of flavor, texture, color, technique, and style.

Fried Milk

If someone in your group prefers a heartier alternative to sashimi and sushi, Uchi doesn’t disappoint there either. The menu features savory meat and vegetable dishes like their Wagyu beef taster, insanely good Brussels Sprouts, tempura veggies, chicken wings, and a 72-hour braised short rib sushi.

Everyone should save a little room for dessert as these sweet endings are just as inventive and flavor-dynamic as the rest of the menu. Options range from the decadent Fried Milk (pictured above), those golden balls are the fried milk cream, with chocolate ganache and vanilla custard. Or go light with a gluten free, dairy free dessert such as the coconut tapioca, or meet in the middle with their lovely jasmine cream (pictured below) with pineapple and a honey crumble base.

Uchi Denver has become one of Denver’s hottest restaurants, with eager eaters lining up at all hours of the night to get a taste. They do accept limited reservations, so we suggest you pick a date a couple weeks out and secure a spot!

Grand Hyatt's Courier Restaurant Elevates Global Classics

Inspired by its historic location at the site of one of Denver’s first newspapers, Courier market | bar | kitchen provides patrons with classic dishes made modern in an updated setting that evokes the space’s past. Focused on local flavors and ingredients, the food is thoughtfully sourced and carefully served with the menu indicating whether a dish is gluten free, dairy free, vegetarian or vegan.

Head Chef David Lillich joined the Grand Hyatt Denver’s culinary team in 2013 assisting with the launch of its previous restaurant. He was quickly promoted to Junior Sous Chef, advancing to the position of Garde Manger of the 4-Diamond Grand Hyatt Denver. Chef Lillich describes Courier’s food, “Our selections are inspired by beloved classic dishes from cuisines from around the world. Our culinary team works at recreating these classics with a modern twist using the finest local ingredients and the best seasonal produce we can find.” We went in for dinner and were impressed by the many choices, the food’s rich flavors and the substantial portions.

We started with GNOCCHI MAC & CHEESE (V) with basil and sundried tomato that was delicious yet decadent. The gnocchi were soft and infused with basil, the sundried tomatoes were moist, and the dish was not overly cheesy. They use a blend of parmesan, cheddar and mozzarella sourced from Haystack Mountain in Boulder and Marczyk in Denver and their pasta comes from local Denver shop Pappardelle’s Pasta.

Our other starter was the BUFFALO BRUSSELS (GF,V) drizzled with hot sauce butter and cashews served with a side of honey bleu cheese. This was also delicious, full of flavors, and nothing like the Brussels Sprouts we grew up eating. There are numerous other starters on the menu including a few different flatbreads, and their Social Hour menu features chicken wings, a charcuterie and cheese board, tempura cauliflower, and chili relleno fried raviolis all under $10.

Social Hour at the bar runs from 3-6pm daily and includes inventive cocktails like the Prosecco based Tabloid and the bourbon-and-absinthe-infused Local Edition. Wine, Colorado beers and a handful of apps round out the Social Hour menu. Guests in the bar can watch the chefs craft their apps and flatbreads in an artisan stone oven.

For entrees, we selected the popular SHORT RIB STROGANOFF and the SMOKED DUCK A L’ORANGE (GF). The Stroganoff was indeed a modern twist on the dish; the presentation and ingredients were elevated, with mushroom raviolis as the pasta portion and a beautiful piece of tender short ribs with a milk stout cream sauce. The Smoked Duck was Asian forward in flavor and came accompanied with soft forbidden fried rice mixed with crunchy snap peas, bell peppers and carrots. Their global cuisine also features dishes such as Scallops and Risotto, Ancient Grain Paella, Chicken Tikka, Swordfish Etouffee and Wagyu Steak and Potatoes.

Located within the financial district’s Grand Hyatt Hotel, Courier serves a variety of delectable food and a noteworthy dining experience during breakfast, lunch and dinner. We loved what we ate and plan on going back again with friends to try even more!

The New AJ’s Pit Bar-B-Q is Seriously Smokin’

Husband and wife team Jared and Amanda Leonard opened their first BBQ Joint in Chicago back in 2010. Eight years later, BBQ Supply Co. has grown into 7 full service restaurants in 2 states, IL and CO, a catering company, BBQ training center, and full-service event production company! Their dream to combine Amanda's love for hospitality and event planning with Jared's love for American BBQ really took off.

After nearly a year of smoking meats only on the weekends, BBQ Supply Co.’s Denver devotees can get their fix any day of the week starting Saturday, January 26th when they reopen as AJ's Pit Bar-B-Q. We were thrilled to attend the launch of their expanded and rebranded restaurant and grub down on their classic Texas style Bar-B-Q and sides.

Walking in reminded us of a vintage shop or your cool grandpa’s den with an old-fashioned fireplace, a vintage record player, and old framed photos and (fake) animal heads on the wall. Past the entry is the main dining room, a casual setting with four picnic tables, a 1,000-gallon Camelback smoker, and open kitchen.

The smell of BBQ meats greets you in the parking lot and lingers along with you home, yeah this BBQ joint is seriously smokin’. Their menu offers lots of options like hefty beef and pork ribs, Waygu pastrami (this was the standout), Waygu brisket, pulled pork, smoked turkey, smoked sausage, and smoked chicken. Leonard also owns The Budlong Hot Chicken food truck and has added the signature Hot Chicken Sandwich with Mississippi Comeback Sauce to AJ’s Bar-B-Q menu. For sides we sampled the Pit Beans made with meat drippings, Truffle Mac n’ Cheese, and their flaky layered biscuits served with an amazing herb butter & mixed berry balsamic jam.

Pit-style BBQ is a method used to create succulently smoked meats that don’t need sauce but being as they started making their own sauces years ago, they continue to supply it on every table. There’s a traditional smokey sweet and Carolina gold, along with a citrus chipotle and jalapeno – of course we tried and enjoyed them all. Leonard plans on eventually retailing the sauces and rubs and has begun offering BBQ 101 classes.

Everything on the menu is sold by the pound until they run out but aim to stay open until 9pm most evenings. In addition to awesome eats, they’ll be serving choice drinks: 5 local craft beers on tap rotation, whiskeys, and two barrel-aged cocktails. Delivery is available through Door Dash or take the light rail – AJ’s is just a block from the West Evans RTD station!

2180 S Delaware St. Denver, Colorado 80223. Open from 11am-9pm.

What's on your 2019 Wish List?

New Year’s Eve in Aspen Photo by Jamie Finn

Whilst everybody else is slowly but surely giving up on their new year’s resolutions to drink less alcohol, eat more greens and get back into their running shoes, we suggest that you focus on your wish list instead. “What wish list?” you ask. Well, the idea of creating a lifelong ‘bucket list’ has been around a little while now, but a smaller, more manageable wish list for 2019 will see you achieve more in a shorter space of time. And have plenty of fun doing so.

The idea is to go big or go home! This could be the year you tick off those lifelong dreams that you've had in your head since high school. Take the plunge and get your first tattoo, travel to Las Vegas and experience everything it has to offer, or even organise a charity skydive. The sky's your limit so don’t be afraid to set the bar high. Even if you don’t manage to tick off everything, you’ll still have done some crazy cool stuff in 2019.

Aerial view of Red Rocks Amphitheatre Photo by Alex Mertz

Visit a National Park

It might seem like we’re starting off on a gentle one, but how many locals have actually been out to take a look around Colorado’s stunning array of national parks? With plenty of amazing natural wonders right on the doorstep, there’s no excuse not to venture into the great outdoors this year.

As a reader of this site, there’s no doubt that you’re into music in a big way. The perfect place to check out some sweet sounds bang in the middle of nature is the world-renowned Red Rocks Amphitheatre. At this gorgeous venue, you can experience everything from classical opera to modern rock bands in the open air, surrounded by incredible undulating rock formations.

Self-built Wonders

Moving on from the wonders of Mother Nature, there’s also plenty of manmade and reappropriated structures in Colorado that are not to be missed. The International Church of Cannabis is a rainbow dream in vivid technicolour from floor to ceiling; even if you don’t partake yourself, it’s well worth a visit to this incredibly decorated place of worship. On a similarly psychedelic theme, the Magic Mushroom House in Aspen is a groovy building conceptualised by 70s architect Andre Ulrych. Certainly an unusual piece of architecture to have a look round.

Other notable sites include: the UFO Watchtower in Crestone, which involves everything alien-related that you always wanted to see – as well as everything you didn’t; Denver’s Buckhorn Exchange, which contains an unbelievable number of taxidermied animals; and Cano’s Castle in Antonito, which is an impressive structure built, strangely enough, entirely from beer cans.

Detox Like Never Before

If you do fancy a bit of a health kick after all, go for something a little more interesting than the usual wilted salad and underused gym membership. In Denver, you can visit the city’s Flotation Center where you can spend time floating in salt water, completely quiet and comfortingly weightless. This should refresh your mind before you head to SunSpa Oxygen Bar in nearby Lakewood. Here you can get a concentrated oxygen hit – in your choice of fruity flavour, no less – to put you back on top form and feeling fighting fit for the year to come.

Go Extreme

Of course, one of the most extreme activities you can put on your list is the good old bungee jump. Colorado has some truly fantastic places where you can experience this ultimate thrill, including from the suspension bridge over the Arkansas River gorge, or above the spectacular Glenwood Canyon. Choosing an outdoor venue with brilliant views like the two mentioned here means that you can enjoy the whole experience and not just the few minutes’ thrill of the jump itself. Make a day of it and return home that evening feeling like you’re on top of the world.

Whatever you decide to put on your 2019 wish list, make sure it’s something fun, memorable and gives you the chance to fulfil a personal dream. After all, that’s what the idea of a ‘bucket list’ is all about and we only get one life – we might as well live it to the full!

Chef Steven Redzikowski of Boulder’s OAK at fourteenth and his brother Brian Redzikowski, Executive Chef of Kettner Exchange in San Diego are competing on the Food Network’s show Beat Bobby Flay Thursday, January 17. The two brothers will battle it out in the kitchen to determine who has the skills to compete against Chef Bobby Flay himself in this episode titled Oh Brother. The winner will be decided by Olympic skier Gus Kenworthy and Chopped's Alex Guarnaschelli and will air at 10pmEST/8pmMST Jan 17.

Steven Redzikowski’s (OAK) Thai Eggplant & Bok Choy & Chicharrones

Before opening OAK with business partner Bryan Dayton, and then Acorn in Denver’s The Source, Chef Steven worked his way up in some very impressive restaurants around the US. For example, Le Cirque in New York, Little Nell in Aspen, and Boulder’s own Frasca Food and Wine. His appearance on the Food Network will add to his list of accolades, especially if he succeeds in Beating Bobby Flay!

To celebrate the brothers’ Food Network premier, OAK shut down dinner service to host a special Dim Sum party cooked by a number of accomplished local chefs from Denver and Boulder. OAK’s open kitchen allowed those who attended to smell, see, and hear the dishes being made well before the Dim Sum carts rolled up to their tables. Guests enjoyed a total of fifteen different dishes from the different chef’s along with wine, Japanese beer, sake, and the house cocktail OAK Tea Time. The food was delicious, adventurous and gave guests unique dishes they won’t find on the menu at any of the Colorado chefs’ restaurants. Below is the full menu, with those in bold being our favorites.

DC Pie Co Opens on East Colfax

There’s a cool new restaurant on Colfax that pairs pizzas and meatballs with craft cocktails and draft beer. The cozy DC Pie Co. features an 80-person dining room and center bar, with a traditional brick oven in the back imported from Italy. Brooklyn based entrepreneur Dominic Cavagnuolo (DC) and Mary Zayaruzny teamed up to deliver Brooklyn-style brick-oven pizza featuring a mean marinara sauce that’s been passed down from DC’s two Italian grandmothers.

All-beef meatballs served with homemade spiced ricotta and house marinara

“Here at DC PIE CO., it all starts with the ingredients,” said DC. “Our sauce is made from scratch every single day with ingredients sourced from local producers. We’re bringing simple recipes and fresh ingredients to Denver, just as I was able to experience as a kid growing up in Brooklyn, NY.” In fact, 99% of DC PIE CO.’s ingredients are made in house, from the cheese, to the dough, to their must-try meatballs, served with their marinara sauce of course!

The Italian brick oven & pizza making area

Keeping things fresh and simple isn’t too difficult with a small menu like theirs. The menu is simple, yet high tech. There are six categories, Pie, Extras, Salads, Sides, Baked & Dessert, and the menu itself is on a “Pop Up and Pay”™ tablet-like menu that allows guests to expedite their ordering and payment process. The Pizza comes plain or vegan and you select toppings like their spicy slices of pepperoni (which you can also order solo because they’re delicious) to imported Italian artichoke hearts, red peppers and portabella mushrooms, all delivered fresh daily! There are seven salads on the menu ranging from familiars like kale Caesar and Caprese to more creative combinations like celery root + fennel or the watercress + pear salad.

Pepperoni “chips” and craft cocktails

We salivated over all their Baked items: the crispy pepperoni “chips”, the juicy, all-beef meatballs served with homemade spiced ricotta and marinara, and the brick-oven baked wings drizzled in their sweet hot sauce. To top it off, all three of their Baked items are on their Happy Hour menu, which is Saturday and Sunday from 3-6pm. Monday through Wednesday’s they have a Brooklyn pie and bottle of wine special for Colfax neighbors for $24! And percentage of all profits from this are donated to the Pediatric Mental Health Institute at Children’s Hospital Colorado.

Happy Hour also has $2 off all drafts and specialty cocktails. They have seven Colorado draft beers and one Pennsylvania Trippel. There’re eight specialty cocktails that all feature different spirits and all-natural, house made ingredients that were impeccable. If you prefer to pair your pizza with a fine wine, DCP has you covered there too with a handful of reds, roses and white wines. For the kids, DC has six juices, soda, lemonade, or let them try a classic from DC’s childhood, a Brooklyn egg cream soda.

Bar Helix | Easy on the Eyes & the Tongue

Bar helix, located in the RiNo District, recently launched a special, supplementary menu of twelve creative versions of the classic Negroni cocktail, becoming Denver’s only Negroni bar. Bar helix is a modern, sexy bar + lounge concept created by Advanced Sommelier Kendra Anderson (aka @SwirlGirlDenver) that showcases 16 sexy, innovative cocktails, alongside an extensive wine list and decadent small plates. Grape based spirits served up sexy is the underlying theme there.

The Negroni was always Owner Kendra’s cocktail of choice, but it wasn’t always available at bars or the bartender wouldn’t know how to make it. In case you don’t know either, a Negroni is a classic Italian cocktail, made of one part gin, one part vermouth rosso, and one part Campari, garnished with orange peel. Bar helix’s signature Negroni features a Vermont gin that’s barrel aged and infused with honey, and a lesser known Campari - this drink glides down your mouth.

Kendra wanted to share her love of the Negroni with Denver through introducing and “educating” her guests to this classic cocktail, along with a variety of classic Negroni spin-offs, so everyone can find a version they love. She relishes in the opportunity the bar provides her to chat and interact with others about her extensive knowledge on spirits and wine - her and Bar Manager Victoria really know their stuff!

On their new Negroni menu, guests will find a variety of versions from the familiar (Campari, Death’s Door gin, Dolin sweet vermouth) to the esoteric (Cappelletti aperitivo, Casa de Valor cava brut, and Casa Mariol vermut). From December 1 through 31, guests who drink any twelve full-sized negroni cocktails will win a holiday-themed negroni gift package, a $25 gift card to bar helix, and get entered in a drawing for a chance to win a $200 gift card to the Denver Center for the Performing Arts! They’ve coined it “The Twelve Negronis of Christmas”. Or, guests who sample twelve baby Negroni cocktails during the month of December will also win a special Negroni themed gift.

The luscious bites are also not to be missed. Kendra (who was once a chef) developed a “sexed-up bar food” menu along with Chef Sam who runs the kitchen. Bar helix makes 85% of the menu items in house, from deviled eggs and shrimp cocktail to the garnishes in you cocktail.

Kendra’s vision to make great things accessible, like fine wine, champagne, caviar, and Negroni is absolutely apparent in bar helix and the aesthetics provide a sexy, yet sophisticated environment to take your mind off the mundane. We recommend you stop by for “Woman Crush Wednesdays”, a date night, or for an “Afternoon Delight” aka happy hour 4-7pm Wednesday-Sunday.

The Rise of VR Arcades in Colorado

It’s been a couple years since advanced virtual reality (VR) consoles entered the mainstream market and broke everyone’s idea of what VR can actually do. These latest developments in VR technology are lightweight, intuitive to operate, and adaptable to a number of applications and multi-sensory inputs – essentially pulling our science fiction-based conceptions of VR much closer to reality. However, when retail prices for modern VR systems proved to be too expensive for common households, the media hype surrounding VR took a slow turn.

Enter the VR arcade. Thanks to these futuristic establishments suddenly popping up in Denver and other cities in the state, you no longer need to spend hundreds of bucks to get your hands and eyes on the latest entertainment tech. But can Colorado’s currently available VR entertainment facilities actually live up to the hype? Is this new VR the experience that gamers and tech enthusiasts have been waiting for? The short answer to that is a resounding yes..

Head Games: the First Public VR Arcade in Denver

"This is somewhere anyone of any age or background could come and try out VR and any kind of experience they want to – have a different experience every time, explains Head Games co-founder Nathan Hostetler in an inverview with 9 News. But why take anyone’s word for it when you can just go there yourself. Located at W. Colfax Avenue, right in the heart of the state capital, this VR arcade opened just last year as the first public VR facility in the city. Today, they offer four separate HTC Vive headsets, each connected to a HyperX Cloud II headphone and assigned to its own open space – designed for free omni-directional movement of up to five feet. With over 40 games and experiences offered here, it’s the perfect place for first-timers to sample VR’s never-before-seen capabilities brought to life.

Veterans, Take Your Places at Kaboom VR

Meanwhile, near Windsor Lake is a VR arcade that has a total of 15 machines – comprised of not just VR headsets, but also the auxiliary controllers that expand the VR experience in this youthful place. But don’t let the chill vibe fool you. This is one of those arcades that make veteran gamers both excited and comfortable. It’s all thanks to the fact that Kaboom VR actually holds regular player tournaments to show off stuff like their racing cockpits, other sports controllers, and top-of-the-line PCs (for more “traditional” gaming). If you’re confident in your skills, you can work your way to the top rankings of games like Project Cars 2, Beat Saber, and Holoball, with the added chance of your name being features at Kaboom VR’s website.

Epic VR's Growing Epic Community

This one’s all the way down in Citadel Mall at Colorado Springs. Epic VR is proof positive that even sleepy mountain towns appreciate cutting edge entertainment technologies. The rather huge spaces available here allows Oculus and HTC Vive headset users to move freely, with facilities that also allow your guests to watch your virtual experience. Much like the founders of the other pioneering VR arcades operating in Colorado, Epic VR’s Joseph Johnson is all about sharing potentially groundbreaking experiences with the rest of the community. I saw an opportunity, and I’d like to give people an opportunity as well, to do things that they sometimes can’t afford. So we tried to make it affordable, where people could come in and play anytime.”

VR Literally Shows the Future of Real Estate

While these arcades started opening for business just last year, VR-enabled tools for enhancing business processes have actually been gestating in this state for quite some time now. Nowhere is this more apparent than in Colorado's red hot property market. The Denver Post provides an in-depth look at how real estate firms like Kentwood City Properties and NAVA Developments have already been using the same tech to attract early buyers of their yet-to-be-finished residential units. “We started our pre-sales very early with several years to go before move-ins,” explains NAVA’s director of marketing Sarah Stone. As potential luxury condo buyers walk through the completed, fully-furnished, and completely digital versions of their future homes, it’s easy to see how useful and influential practical VR tech can eventually become.

VR: An Emerging Central Player in Nearly Every Key Industry

As you can probably already imagine, different applications of VR have already been making similar leaps and bounds across other states and industries. Where do you think the equipment for the above-mentioned arcades were sourced from? In the east coast, it's doubtless that there’s serious money to be made via VR. In fact, online casino guide Gambling.com offers a comprehensive list of New Jersey-based virtual casinos already delving into VR-enabled game play. It is in fact not rare for regular players of live VR casinos to sometimes develop friendly, amiable relationships with the live dealers that they consistently encounter online, some of which have actually garnered their own small group of loyal fans. Meanwhile, in institutions like the University of California, VR has taken a central role in the practical training of both students and professionals in various medical fields and specializations. In fact, during the last couple years, VR developers and engineers have been collaborating with some of the most experienced doctors in the country with one goal in mind: to create the most efficient, medically-accurate, realistic, and intuitively-designed VR training modules for nearly every medical procedure that can be considered essential, extremely risky, or impossibly difficult.

Yes, you read that right: the same advanced entertainment system which rewards you for accurately swinging virtual sabers to a given beat could also be responsible for creating the most well-informed and well-trained generation of medical professionals in history.

Given these recent and major developments in VR, we’d likely have to feign surprise when concert organizers eventually offer VR passes for absent but dedicated fans. This bodes well for the unlucky folks who live in Colorado but somehow often miss the best nights at Red Rocks – like that one time when visionary trip-hop musician Bonobo shared the stage with Chet Faker. Of course, nothing beats actually being physically present at your favorite artists' performances. But with VR tech already undergoing heavy development in a number of significant American industries, who knows just how epic it will be to attend future gigs from the comfort of your own virtual reality.
